La palabra \u00abkeshi\u00bb viene del neerland\u00e9s \u00abkaas\u00bb, que significa \u00abqueso\u00bb. No es una casualidad ling\u00fc\u00edstica, ya que Curazao fue durante mucho tiempo un puesto comercial de la Compa\u00f1\u00eda Neerlandesa de las Indias Occidentales, y el queso de Gouda o de Edam, que se importaba en ruedas redondas desde los Pa\u00edses Bajos, era uno de los alimentos que consum\u00edan los colonos holandeses en la isla. yena surgi\u00f3 en las cocinas de las plantaciones, donde las personas esclavizadas preparaban las comidas de los amos coloniales. Las ruedas de Gouda y Edam, una vez que se com\u00eda su interior en la mesa, dejaban una c\u00e1scara de corteza que los colonos consideraban sin valor. Desde el siglo XVII, Curazao desempe\u00f1\u00f3 un papel fundamental en el comercio atl\u00e1ntico organizado por los Pa\u00edses Bajos, incluida la trata de personas africanas reducidas a la esclavitud, que pasaban por la isla antes de ser enviadas a otras colonias. Willemstad, la capital, conserva a\u00fan hoy su arquitectura mercantil, con esas fachadas de colores que son un legado del comercio holand\u00e9s.<\/p><p>El keshi yena surge de ese encuentro forzado entre los productos l\u00e1cteos del norte de Europa y una mano de obra africana que no hab\u00eda pedido nada de este comercio, pero que convirti\u00f3 un desecho en un plato. La isla vecina de Aruba, que comparte con ella una historia colonial neerlandesa muy parecida, tambi\u00e9n reivindica este queso relleno como su propio plato nacional. Las dos islas cuentan la misma receta b\u00e1sica, con ligeras variaciones seg\u00fan cada casa, sin que ninguna ceda ante la otra. M\u00e1s que una rivalidad, este hecho dice mucho de la regi\u00f3n neerland\u00f3fona del Caribe: un mismo gesto de recuperaci\u00f3n, nacido en un contexto colonial com\u00fan, adoptado y reivindicado como identidad propia por dos territorios distintos.<\/p>\t\t\t\t\t\t\t\t<\/div>\n\t\t\t\t<\/div>\n\t\t\t\t<div class=\"elementor-element elementor-element-761b880 elementor-widget Algunas cocineras siguen cocin\u00e1ndolo dentro de una rueda de queso entera, como en los primeros tiempos, mientras que otras, por falta de tiempo, se conforman con un molde o un cuenco peque\u00f1o forrado con lonchas de queso.
