A childhood lulled by Jamaican flavors

Born and raised in Jamaica, Chef Odean Smith developed an early passion for gastronomy. Between fragrant spices and emblematic dishes such as jerk chicken, curry goat or traditional pastries, he was nourished by a rich and authentic culinary culture. This sensory baggage, rooted in his childhood, has become the cornerstone of his career. His talent and determination enabled him to work as a consultant for 18 restaurants, where he transformed menus and optimized operations, enriching his experience and honing his culinary management skills.

A decisive encounter with kosher cuisine

It was in Brooklyn, at a Mediterranean restaurant on Atlantic Avenue, that Chef Odean Smith made a discovery that would change the course of his career. Intrigued by the kosher world, he immersed himself in this demanding cuisine, learning its strict rules while infusing it with his own Caribbean influences. This encounter enabled him to grasp the subtleties of kosherism, while respecting the norms and integrating techniques and flavors with which he was familiar.

Today, he is one of the few black Caribbean chefs to excel in this field, collaborating with a kosher restaurant in Jackson, New Jersey. His work has been hailed by the big names in kosher dining, who see in him a chef capable of fusing authentic tradition with innovation. This success has become an inspiration to many young chefs who aspire to reinvent the classics while respecting the strict rules of kosher cuisine.
